Tender mutton chunks are pressure-cooked or slow-cooked and then stir-fried in a blend of dry-roasted spices (coriander, cumin, fennel, peppercorns, cloves, cardamom, cinnamon), grated dried coconut or poppy seed paste, onions, green chilies, and curry leaves until the spice paste clings to the meat and all moisture is roasted off.This hearty starter is perfect on its own or served alongside flatbreads, rice, or dosa.
